With a twinkle in her eyes and a heart brimming with love, Jennifer Jill McCoy began her grand adventure in Tompkinsville, KY, USA, on November 15, 1972. Who knew that this Kentucky girl would go on to be the most supportive pillar, the most compassionate friend, and the most loving family member that anyone could ever wish for? Jennifer, or as we fondly recall, the "Empathetic Elephant Enthusiast," embarked on her eternal fishing trip on October 24, 2023, leaving behind a legacy of love and laughter.

Jennifer, a devoted homemaker, was a firm believer in the famous quote by Maya Angelou, "I've learned that people will forget what you said, people will forget what you did, but people will never forget how you made them feel." She embodied this sentiment throughout her life, whether she was cheering on the Golden Girls, planning the next family vacation, or offering a shoulder to lean on when times got tough. Her genuine empathy and warmth touched the lives of all around her. Her love for elephants was only paralleled by her love for fishing - a hobby she pursued with infectious enthusiasm.

Jennifer leaves behind her loving spouse, Lela McCoy, her proud son, Tyler Baxter, and her cherished daughter, Brittany Webb. She is also survived by her loyal brother, RJ Simmons, and her beloved grandchildren, Rylee Simmons, Liam Simmons, and Ellison Wheeler. Jennifer joins her dear parents, Roger and Betty Simmons, on her new journey. As we remember Jennifer today, let us celebrate her compassionate spirit, her boundless love, and above all, her unwavering dedication to her family - her greatest treasure.
